Recipe: Perfect Potatoes

Perfect potatoes for potlucks, Thanksgiving and fall meals with family.

Glazed Sweet Potatoes

serves 10-12, prep time: 15 minutes, total time: 45 minutes

Ingredients
4 pounds red-skinned sweet potatoes, peeled, medium dice
1/2 cup fresh cranberries
2 tablespoons butter
2 cups apple cider
1/2 cup maple syrup
6 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon ground allspice
1/4 cup green onions, finely chopped

Method
Saute the diced sweet potatoes over medium heat in a heavy large skillet with 2 tablespoons of butter.
After 5 minutes, add the cranberries.
Continue to saute until the potatoes start to get tender.
Add the apple cider, maple syrup, salt and allspice in the skillet and simmer over medium heat.
Continue cooking until the sweet potatoes are tender and the liquid is reduced to a syrupy glaze.
Add the remaining butter and stir to emulsify.
Season with salt & pepper.
Transfer to bowl, sprinkle with green onions.

 

Perfect Mashed Potatoes

serves 10-12, prep time: 10-15 minutes, total time: 40 minutes

Ingredients
2 pounds Yukon Gold or russet potatoes (unpeeled)
1/2 cup whole milk
1/4 cup (1/2 stick) butter
salt & pepper

Method
Place potatoes in large saucepan; cover with water.
Bring to boil, reduce heat to medium, and simmer until tender (about 20 minutes)
Drain well; cool slightly.
Peel potatoes, place in a warm saucepan.
Over low heat or in a warm oven, dry out the potatoes for two minutes.
Meanwhile, heat milk in a small saucepan until warm.
Mash your potatoes in a bowl.
Fold butter into the potatoes.
Add the warm milk and stir until completely absorbed.
Season with salt & pepper.
