Good news from the cheese department. We will soon be featuring Moonglo, a goat cheese from Prairie Fruits Farm near Champain, Illinois. This fabulous, artisanal farmstead goat cheese has flown under the radar in our area until now. The larger cheese world has taken notice though and Prairie Fruits cheeses have placed well in recent years' American Cheese Society competitions. Moonglo is a "raw milk tomme-style cheese with a washed rind. In addition to ripening cultures, we wash the rind with a "tea" made from Moonglo Pear leaves. Aged three to four months. Slightly nutty with notes of ripe fruits and truffles." Best of all, Prairie Fruits is close enough to be considered local. Check out their website then drive out for a visit.
