Recipe: Grilled ParmReg Sandwich

This is not the grilled cheese of your childhood, the Parmigiano Reggiano cheese is all grown up. Try this simple and sensational sandwich for a quick lunch, supper, or midnight snack.

  • 2 slices country bread, such as sourdough or farm bread
  • 3/4 cup finely grated Parmigiano Reggiano
  • coarse ground pepper
  • unsalted butter (such as Organic Valley European Butter

Cover one slice of cheese with the grated Parmigiano Reggiano cheese, and generously grate pepper over the top. Heat butter over medium-low heat in frying pan or on a cast iron griddle, until foamy. Add the cheese sandwich, pressing it onto the pan. Slowly fry, regulating the heat so the butter doesn't burn. Once light brown, turn the sandwich over, and press down to compress slightly. Brown the other side, then transfer to a paper towel. Serve with a salad or side of lightly cooked vegetables, and your favorite wine. Makes 1 sandwich.
