From their location in western Monroe County, Chris and Feng Valliant run Phoenix Farms, selling Asian vegetables and other greens at the Bloomington Community Farmers Market. Now they offer tofu to Bloomingfoods!
“We thought the tofu would be a great addition to the Bloomington area market,” explains Chris. “When we traveled to China last year, we jumped at the opportunity to learn the traditional art of tofu-making from a 3rd generation tofu master, with a lot of help from Feng’s father.
In the production stages our tofu is highly filtered, which gives it the smooth rich texture. All our tofu is made in small batches by hand, so some customers may notice some variations in thickness. The traditional methods we employ produce a ‘sheet’ rather than a block extruded from a machine in a factory.”
