It can be both a shock and a relief to learn that you are sensitive to particular foods. On a gluten-free store tour, customers move through every department, including the deli, learning which products might be a good fit for their needs. Amber is also knowledgeable about vegan products, such as Earth Balance natural buttery spread, or vegan/dairy-free cheese.

A gluten-free diet is completely free of ingredients derived from gluten-containing cereals such as wheat (including kamut and spelt), barley, rye, and triticale. It also avoids any foods that use gluten as a flavoring, stabilizing, or thickening agent. Gluten-free foods are recommended in the treatment of celiac disease, non-celiac gluten intolerance, dermatitis herpetiformis, Lyme disease, and wheat allergy. Many people on a gluten-free diet use only oats sourced from a facility that is certified as gluten-free.
