Recipe: Coconut Curry Poached Cod

This quick and easy dish is ready in less than 30 minutes.  Serve it up with rice for a wonderful meal.

1 Tbsp. canola oil
1-1/2 tsp. mustard seeds
1 Tbsp. fresh ginger, minced
2 Tbsp. curry powder (substitute cayenne if
you like it hot)
3/4 tsp. salt
1 cup onions, slivered
1 red bell pepper, diced
2 cups eggplant, diced
14 oz. coconut milk
2 Tbsp. fresh cilantro, minced
4 large pieces cod (or other mild fish such
as halibut, tilapia or trout)

In oil over medium high heat, sauté mustard seeds until they stop making a popping sound. Add onions, peppers, eggplant and ginger and lightly brown. Add curry powder and salt and sauté 5 minutes. Add coconut milk and bring to simmer. Add fish and cilantro and simmer until fish is done, about 6 minutes.
