This month, we are very proud to introduce Ludwig Farmstead Creamery's new semi-hard cheese! Award-winning Dutch cheesemaker Fons Smits created this raw-milk, natural rind cheese exclusively for sale at Bloomingfoods - truly making it a private stock for co-op supporters. The Ludwig family farm sits two hours away from Bloomington in Fithian, Illinois, where they keep a small and pampered herd of state-champion Holsteins.
Mr. Smits' newest creation comes from the milk of a stock of only 25 cows and is aged for three to four months, imparting a smooth texture similar to a soft gouda or gruyere and a salty and slightly nutty taste. This rustic, simple flavor is great for everyday cooking or the cheese plate. We suggest grating over an arugula salad with toasted almonds or melting into Midwestern comfort dishes like macaroni and cheese.
